New downtown San Luis Obispo restaurant, Eatz by Dezign, opened three weeks ago on Feb. 18 and serves pizza, soups, sandwiches and salads.

“Our concept is really based on providing simply delicious food of a really high caliber and quality really quickly and affordably,” executive chef Johnny Jantz said. “So, ‘slow food fast’ is our motto.”

The restaurant uses local farmers’ produce as much as possible for fresh ingredients in wholesome dishes, he said. Jantz even shops at Farmers’ Market on Thursdays to buy fresh vegetables and fruits.

The menu is seasonal and changes almost weekly. One of the most popular dishes is the “pizza of the moment.”

Customers design their own meal, guided by the chefs.

“It’s another option for students to get a wholesome, balanced meal at a price that they can afford and their mamas would be proud of,” Jantz said.

The restaurant is located on 849 Higuera St. in a historic San Luis Obispo building.

“We have kind of brought the historic aspect of downtown San Luis and combined it with sort of the modern, contemporary edge,” he said.

The back dining room features a skylight, and the restaurant walls are lined with photos of local farms whose ingredients are used in the meals. Dishes range from $3 to $9.

Eatz by Dezign is open from 11 a.m. to 11 p.m.
